Friulano

Symbol of these noble lands

Harvested in early September, the grapes come from a single clone, massal selection of an old vineyard in Collio (Gorizia) producing characteristic wines with a good aroma and structure. 50% of the wine is vinified without the skins, while the remaining 50% is macerated overnight (skins and must) at 6 °C. The musts obtained, cold settled and cleaned, are blended and conveyed for fermentation in temperature-controlled stainless steel tanks (60%) and oak barrels (40%). After two weeks, it reaches its full alcohol content and is then decanted to separate the heavier lees, allowing a longer ageing period on the finer lees. In mid-spring, following light clarification, the wine is blended and bottled. Intense straw yellow colour. The nose reveals all the notes typical of a Friuli wine with almonds to the fore and a slightly bitter finish on the palate.

Traminer Aromatico

Full aromatic expression

The vineyard employs a clone obtained from massal selection of an old vineyard belonging to the Foradori winery in the Trentino. The grapes are harvested after mid-September in the cooler hours of the day and then immediately cold macerated at 6 °C for 12 hours.
The must is cold settled to obtain a very clean juice and then fermented in stainless steel tanks at a controlled temperature (max 16 °C).

Ideal as an aperitif or with fish, shellfish and crustaceans in general.

Sauvignon

Harmony, balance, refinement

The vineyard uses two clones, the classic R3 giving very fragrant wines and the 297 which produces highly-structured wines. The grapes from the aromatic clone are macerated overnight at 6 °C while the others are immediately vinified without the skins. The musts are cold settled to obtain a very clean juice, blended and then fermented in stainless steel tanks at a controlled temperature (max 16 °C).
Fermentation lasts about 14 days, at the end of which the wine is decanted twice to separate the heavier lees, leaving it in contact with the lighter lees.

The winter cold helps stabilize and clarify the wine naturally, giving a Sauvignon which is lightly clarified and filtered, then bottled. Straw yellow with greenish hues, the bouquet is aromatic with hints of fruit such as white-fleshed peaches and wild flowers.
The taste recalls all the sensations on the nose.

Ideal with raw, steamed or fried fish or shellfish. Also excellent as an aperitif.

Chardonnay

A remarkable endowment of pleasure

Harvested during the first ten days of September, the grapes come from a single clone known as Ersa, giving wines with a good aroma and structure. 50% of the wine is vinified without the skins, while the remaining 50% is macerated overnight (skins and must) at 6 °C. The musts obtained, cold settled and cleaned, are blended and conveyed for fermentation in temperature-controlled stainless steel tanks (80%) and oak barrels (20%), where the full alcohol content is reached in two weeks.

The wine is then decanted to separate the heavier lees, allowing a longer ageing period on the finer lees. In mid-spring, following light clarification, the two wines are blended and then bottled. Straw yellow with greenish highlights. To the nose, the wine reveals elderflower, golden apples and fresh crusty bread.
These sensations are confirmed in the mouth, with a good balance between acidity, softness and structure.

Pinot grigio

Balance and international appeal

The vineyard employs the R6 clone, giving wines with a good aroma and structure.
The grapes are harvested in early September in the cooler hours of the day and then vinified immediately without the skins. The must is cold settled to obtain a very clean juice and then fermented in temperature-controlled stainless steel tanks (70%) and oak barrels (30%). When fermentation is complete, the wine is decanted twice to separate the heavier lees, allowing a longer ageing period on the finer lees.

The winter cold helps stabilize and clarify the wine naturally, giving a Pinot Grigio which is blended, lightly clarified and bottled halfway through the spring. Straw yellow with coppery highlights and a bouquet of ripe fruit. Good structure and freshness on the palate. Ideal with fish (both raw and cooked), first courses and white meats.
